Cauliflower Latkes

These cauliflower latkes are so easy and simple to make! They strike the perfect balance between fried potatoes and donuts. Here’s all you need:

Ingredients:

  • 1 bag frozen cauliflower rice (450g)

  • 2 eggs

  • 3 tablespoons classic tahini (or any flavor)

  • 1 scoop goddess prebiotic

  • 3 tablespoons almond flour

  • Pinch of salt & black pepper

Instructions:

  • Preheat your oven to broil at 400°F.
  • In a large mixing bowl, combine all the ingredients and mix well.

  • Line a baking sheet with parchment paper. Scoop out the latke batter using an ice cream scooper, then press down the tops to create a circular shape.

  • Broil for 8 minutes, then flip the latkes. Continue to broil for another 4-5 minutes, or until they are golden brown.

  • Serve hot with an additional drizzle of tahini or a dollop of sour cream. Enjoy!
