Classic eggplant salad
My Classic Eggplant salad:
♦️Ingredients:
Eggplant
Bunch : chopped parsley & Mint
Sprinkle: salt, pepper, Nutmeg
Fresh chopped Spicy pepper
1 lemon juice
2 Tbs olive oil
♦️Instructions:

With a fork make some holes in the eggplant
Roast the eggplant on a skillet on medium high heat until very soft (about 25-30 minutes) or in the oven 400f for 35 minutes or until completely soft

While the eggplant heats up chop your herbs

When your eggplant feels soft to your touch half it lengthwise (careful the inside is very hot and steamy)
Scoop the egplant flesh out with a spoon and put in into a mixing bowl

In a mixing bowl combine all ingredients and mix well , taste and adjust flavorsif needed , I always add more olive oil and lemon 🍋 enjoy 😊
