Curry risotto
Creamy Curry tahini risotto, so simple to make and so delicious! Curry tahini is extra anti inflammatory fuel your body with all the health benefits of Mediterranean food .
Ingredients:
6 tbs curry tahini
1 can coconut milk
1 scooper goddess prebiotic ( optional to up the fiber, highly recommend)
2 bags of Palmini hearts of palm rice ( or cauliflower rice , or any rice of your choice)
1 cup chopped leek
2-3 cups chopped mushrooms
1/2 cup chopped scallions
1 chopped chili
Salt & pepper to taste
Instructions:
- on low medium heat combine coconut milk, curry tahini & the goddess prebiotic, mix well
- Add all vegetables in , mix well and add a drizzle of curry tahini for extra deliciousness & flavor
- Cook on low medium heat for about 20-25 min if you like your risotto extra mushy cook for 30-35 min , you can taste and adjust at any point
- Salt & pepper to taste, garnish with fresh chopped green herbs of your choice & enjoy
