hamantaschen, vegan & high fiber
This recipe for delicious hamantaschen. The dough is so soft and scrumptious that it will simply melt in your mouth. Moreover, it is high in fiber and vegan, making it a perfect treat for you to enjoy all year round.
Ingredients:
- 1 cup of Fiber Gourmet flour
- 1/4 cup of Nuco coconut butter
- 3 tablespoons of silan tahini
- 1/4 cup of room temperature water
- Three scoops of the Goddess prebiotic
Stuffing:
- 3 tablespoons Silan
- 3-5 tablespoons coconut halva (or any flavor)
Toppings:
- Coconut chips (optional)
- A sprinkle of the Goddess prebiotic instead of powdered sugar
Instructions:
1. Preheat the oven to 350F.
2. Mix all the ingredients well in a medium mixing bowl. You can use your hands to create a dough.
3. Divide the dough into eight small balls.
4. Flatten the balls into flat circles.
5. Take the left side of the circle and fold it, then take the right side and fold it, and finally, fold the bottom to create a little triangle. Pinch each corner of the triangle gently but firmly to secure the shape.
6. Place a teaspoon of filling (silan or halva) in the center and top with coconut chips.
7. Bake for 15 minutes. The edges should be a light golden brown.
8. Allow the hamantaschen to cool completely, sprinkle the Goddess prebiotic instead of sugar, and enjoy.
*Note: If you don't have Fiber Gourmet flour, you can use regular flour or a gluten-free flour blend. If you use almond flour or coconut flour, you'll need to add one egg.
