Lemon Pickle Recipe
Tangy and spicy, this lemon pickle is a delightful condiment.
Ingredients:
- 2 lemons, thinly sliced
- 2 tablespoons of salt
- 1 tablespoon of red paprika
- Water (enough to cover the slices in the jar)
- 1 teaspoon of vinegar
- A 500ml sterilized glass jar
Instructions:
- Prepare Lemons: Wash the lemons and slice them thinly, making sure to remove any seeds.
- Season: Combine the salt and paprika in a bowl. Place a layer of lemon slices in the jar, sprinkle with the seasoning mix, and repeat until all slices are in the jar.
- Squeeze: Once all lemon slices are in the jar, press down on them from the top to release some juice. This helps to mix the salt, paprika, and lemon juice throughout the jar.
- Add Vinegar: Drizzle the vinegar over the top of the squeezed lemon slices.
- Submerge: Fill the jar with water, ensuring the lemon slices are completely submerged to prevent air exposure.
- Ferment: Seal the jar tightly. Place it in a sunny spot for 5 days to allow the lemons to ferment, then move it to the refrigerator for 1 day before opening.
