Roasted fennel

Fennel is so underrated, one of my absolute favorite vegetables. You must try this recipe.




  • 2 fennel bulbs
  • 3 tablespoons olive oil
  • 1 teaspoon sumac
  • 1 teaspoon za'atar
  • Salt and pepper to taste


  1. Preheat the oven to 400°F.
  2. Slice the fennel into thin slices using a sharp knife or mandolin.
  3. On a parchment-lined baking sheet, arrange the fennel slices in a single layer.
  4. Drizzle olive oil on top and sprinkle with spices.
  5. Broil for 15-20 minutes or until golden and edges are crispy.
  6. Dip in curry tahini or any tahini flavor and enjoy; it’s so delicious.
  7. You can keep leftovers in the fridge and add them to your salad the next day.
