Today, Iā€™m making a Creamy Ā tahiniĀ  Stir Fryā€”a delicious, veggie-packed meal thatā€™s perfect for any day of the week. Get ready for a flavorful, nutritious, and easy-to-make dish!

Ingredients:

  • 2 tbsp olive oil
  • 2 eggs
  • 1 bag of shaved Brussels sprouts
  • 1/3 cup scallions, chopped
  • 1/3 cup mixed fresh herbs (dill, parsley, and cilantro)
  • Optional: any favorite veggies (think bell peppers, mushrooms, or zucchini!)
  • Spices:
    • 1 tbsp Cajun spice blend
    • 1 tbsp masala spice blend (Both Pereg spicesā€”if you donā€™t have these, smoked paprika and cumin are great substitutes)
  • 1/2 cup tahini (I love using Caesar-flavoredĀ tahiniĀ  for this recipe!)
  • 2 tbsp liquid aminos (a great soy sauce alternative!)
  • Optional topping: preserved lemon or pickled lemon for a zesty finish

Instructions:

  1. Heat It Up: Start by warming 2 tbsp of olive oil in a skillet over medium heat. Add your spices (Cajun and masala) to the oil and let them infuse for 1-2 minutes. This step releases those rich, aromatic flavors and maximizes the health benefits of each spice.

  2. Add the Veggies: Toss in the Brussels sprouts and stir well, coating them evenly in the infused oil and spices. Cook until they begin to soften, around 3-5 minutes.

  3. Mix in the Herbs: Add the chopped scallions, dill, parsley, and cilantro. SautƩ everything together for another 3-5 minutes until the herbs are fragrant and the Brussels sprouts are tender.

  4. Cook the Eggs: Make a well in the center of your skillet, crack in the eggs, and scramble them gently. Once theyā€™re cooked, stir everything together until well combined.

  5. Season: Pour in the liquid aminos (which also adds a light, savory flavor). Taste and adjust if needed, and add a splash of lemon juice for a bit of brightness. Let everything cook together for an additional 5 minutes.

  6. Make the Ā tahiniĀ  Sauce: While the veggies are cooking, mix 1/2 cup Ā tahiniĀ , juice of half a lemon, and 1/4 cup cold water in a bowl. Stir until you get a creamy, smooth sauce. Adjust the thickness by adding more water (for a thinner sauce) or moreĀ tahiniĀ  (for a thicker consistency).

  7. Serve and Garnish: Spread a layer of the creamyĀ tahiniĀ  sauce on your plate, pile on the stir fry, and drizzle more Ā tahiniĀ sauce on top if youā€™d like! Top with preserved lemon or any of your favorite garnishes, plus a sprinkle of fresh herbs.
