Tabouli salad with a twist
Gluten free tabouli salad
Ingredients :
1/2 lb cauliflower rice ( about 3 cups )
1/2 cup chopped parsley
1/3 cup chopped pecans
1/3 cup chopped red onion
2 fresh tomatoes ( squeeze the juice only)
2 lemons ( juice)
1 Chopped jalapeños ( optional)
5 Tbs olive oil
Spices: salt, pepper, sumac
Instructions:

Chop all vegetable & pecans and combine in a large mixing bowl

Sprinkle spices to taste, add the tomato juice, lemon juice and olive oil, mix well

Cool for minimum 30 minutes in the fridge before serving .

Note: be generous with olive oil and lemon if needed add more , enjoy 😊
