Vegan coconut macaroons for Passover
Passover coconut macaroon :
Ingredients: ( makes 6 macaroons)
1 cup unsweetened coconut chips
1/2 cup full fat coconut milk ( can )
3 tbs coconut flour
1 tsp coconut stevia sweetener or 2 tbs honey
Instructions:

preheat oven to 375f

Combine all the ingredients in a mixing bowl and mix well

On greased silicon mold ( I used coconut spray) or . Drop by rounded teaspoonful on prepared baking sheets; press each cookie lightly with back of the spoon

Bake for 15-17 min or until lightly brown around the edges ( u can try them at anytime, no raw ingredients inside)

Serving option : a drizzle of honey or drizzle of dark chocolate & sprinkle cinnamon on top , both options are delicious but I am a chocolate lover ! So chocolate won !

Important note:

because we didn’t use egg whites or gum to combine ingredients I recommend to pass the macrons from the oven to the refrigerator for 5- 10 minutes to keep the shape, but they will be perfectly fine to eat from the oven as well ..

If you are not vegan or have egg allergies you can add 1-2 egg whites to the mixture if you wish so
