Vegan Gluten Free Stuffed Vegtebles
Stuffed peppers : serves 2
What do you need :
1 Tbs avocado oil or your favorite oil
1 Cauliflower floret, grind to snow texture Or ( 1 frozen bag )
Parsley ,Cilantro, Dill (optional ) as your taste
1 Leek
1 scallions
1 cup of mushrooms
1cup Coconut milk
2 Peppers
1 Zucchini
Spices :
1/2 tsp Curry
1/2 tsp cumin
1/2 tsp paprika
Salt to your taste.
Instructions:

Chop the vegetables.

Sauté leek and the mushrooms in a skillet, slowly add all the other vegetables, add cauliflower in the end .

Add spices ( salt , Curry , cumin , paprika)

Cook for 7-9 min on medium - high heat, mix every 3 min .

Simmer low for 7 min .

Time to prepare your vegetables to be stuffed:

Peppers: cut the top ( keep for pretty serving) and clean the inside well.

Zucchini : cut into 4 even pieces and clean the inside with a special spatula.

Make sure that the cooked veggies have cooled down and add the coconut milk .

Stuff your vegetables with your creamed coconut veggies

Place the stuffed vegetables on a tray layered with parchment paper and bake it the oven on 425 for 20-25 min orr until tender and golden.
