Carrots pumpkin pie

Carrots Pumpkin pie
2 eggs
1 cup almond flour
1/2 cup granola
5tbs of honey or your favorite syrup: 2 tablespoon for batter of syrup (the rest for the end on top of the carrots )
1/3 cup shaved raw almonds
1 cup sliced carrots
2 tablespoon tahini
1/2 cup mini marshmallows (optional)
2 tablespoon pumpkin purée
1tsp: pumpkin Spice, cinnamon

Instructions:
  • preheat oven to 375f ( bake )
  1. In a medium mixing bowl, start with whisking 2 eggs and add all liquid ingredient
  2. Add almond flour & granola and mix well
  3. Spray your pie dish and layer batter in one layer
  4. Bake for 5 minutes and take out, and change oven to 425f on broil ! Very important!
  5. Carefully add the carrots on top and brush them with the rest of your syrup/ honey , glazed them from all sides .
  6. Back to the oven for 10-12 minutes or until carrots looks soft and crunchy
  7. Add marshmallows and almond and bake for 1 minuet linger, be careful it can burn easily!
  8. Serve warm or cold, you can add scoop on your fave ice cream as well, enjoy
Note: if you are sweet lover add more syrup on top when ready to serve
