Eggplant avocado fan :
❇️INGREDIENTS
1 LARGE EGGPLANT
1 LARGE AVOCADO
2tbs pesto tahini
1tbs spicy tahini
1 LEMON JUICE
SPICES: SPRINKLE SALT , PEPPER , ZAHTAR ( optional)
Scallions & feta cheese for garnish ( optional)
❇️INSTRUCTION :
  1. CUT THE EGGPLANT LENGTHWISE (ABOUT 1/2 AN INCH THICK) MAKING SURE EACH SLICE IS STILL ATTACHED TO THE STEM.
  2. BRUSH EACH SLICE GENEROUSLY WITH Coconut oil ( or any oil )
  3. BAKE IN A PREHEATED OVEN AT 425f  FOR 20-25 minutes or until completely soft & cooked .
  4. WHILE THE EGGPLANT IS IN combine avocado, tahini AND LEMON JUICE IN A Medium MIXING BOWL, MIX IT WELL , MAKE SURE THE AVOCADO IS BLENDED COMPLETELY AND MASHED BY A FORK AND MIX WELL WITH ALL THE INGREDIENTS TASTE AND ADJUST IF NEEDED .
  5. INSERTS THE FILLING IN BETWEEN THE EGGPLANT SLICES, BE CARFUL IT’S SUPER HOT! AND BACK TO THE OVEN FOR 3 MINUTES , garnish w scallions & feta cheese on top ( optional but delicious, highly recommend) , enjoy.
