Mushrooms muffins
Mushrooms tahini muffins (6 muffins)
♦️Ingredients
6 Tbs tahini
2 Tbs chia seeds
2 Tbs vegan cream cheese ( I use kite hill , you can substitute with regular cream cheese )
2 cups water ( room temperature )
1/2 lemon ( juice)
1 Tbs Lemon zest
1 tsp Baking powder
2 Tbs Honey
1 tsp curry powder
1/2 cup fresh sliced mushrooms
♦️ instructions:

preheat oven to 375 f

Soak the seeds ( 2tbs chia seeds ) in a large mixing bowl with the 1/2 cup of water for 10 minutes or until “ gel texture “ is formed

Add all the ingredients into the mixing bowl and whisk it well

Spray muffins mold with coconut spray

Pour batter into the muffins mold and bake for 20-30 minutes or until golden brown

Let it cool down for 10 minutes before serving
Notes :
1. You can substitute the flax & chia seeds with 2 eggs

I love serving the muffins with cream cheese on top and sliced avocado with sprinkle of salt and Zahtar

Store in the fridge ( up to 7 days )
