Skinny zucchini
♦️Zucchini boats 🌮
Ingredients:
3 zucchini
3 squash
2-3 cups cauliflower rice
1 cup chick peas
1 bunch scallions
1 bunch parsley
2 Tbs avocado oil ( or your favorite)
Spicy fresh pepper ( optional)
Spices: salt , pepper, cumin, all spice
♦️Dressing on top : ( optional )
5 Tbs vegan cream cheese ( I use kite hill )
1 lemon ( juice )
Sprinkle salt & pepper and mix well drizzle on top
Note - if your not dairy free you can top it up with labane or goat cheese yogurt
Instructions:

- preheat oven to 375f
- Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in. shells. Place your zucchini boats on parchment paper, spray them with oil and place in the oven 15 -20 minutes or until tender.
- Chop : zucchini pulp, parsley, scallions and spicy pepper
- Put some avocado oil (or your favorite) in a skillet and heat to medium/high Add cauliflower rice, zucchini pulp, scallions, parsley and spicy pepper stir and cook for 15 min. Spice with salt and pepper, mix well and spoon into the zucchini shells.
- Bake, uncovered, at 350° for additional 10 minutes
- Drizzle dressing on top and serve, enjoy 😉
