Beet Carpaccio
What do you need :
Red and golden raw beets
Fresh green herbs : mint, chive, basil, parsley or your favorite
1 Lemon
White Vinegar
Olive oil
Salt
Instructions:

Slice your beet as thin as you can (preferably with a special veggie slicer)

Place them in a bowl with ice water to cover the veggies, add 2tbs of white vinegar sprinkle salt . Set aside for 30 min minimum

Layer them on a flat plate

Add chopped green herbs on top
-
Squeeze lemon juice and drizzle on top

Drizzle olive oil
-
Sprinkle salt
-
Add your favorite Cheese crumbs on top *optional I used kitehill cheese .
