Beet Carpaccio

What do you need : 
Red and golden raw beets 
Fresh green herbs : mint, chive, basil, parsley or your favorite 
1 Lemon 
White Vinegar 
Olive oil 
  1. Slice your beet as thin as you can (preferably with a special veggie slicer)
  2. Place them in a bowl with ice water to cover the veggies, add  2tbs of white vinegar sprinkle salt . Set aside for 30 min minimum 
  3. Layer them on a flat plate
  4. Add chopped green herbs on top 
  5. Squeeze lemon juice and drizzle on top 
  6. Drizzle olive oil 
  7. Sprinkle salt 
  8. Add your favorite Cheese crumbs on top *optional I used kitehill cheese .
