Gluten free pumpkin muffins

Pumpkin muffins:  (6 muffins) 
2 eggs 
4tbs almond flour 
2 tbs pumpkin flour  ( see my note 📝) 
3tbs maple syrup 
3tbs almond milk 
1tbs baking powder 
1/2 tsp vanilla extract ( optional ) 
Sprinkle of salt and cinnamon and pumpkin spice 
1/3 cup Unsweetened dark chocolate or your favorite topping  ( I love shaved almonds) 
  • preheat oven to 375F 
Combine all wet ingredients in a medium mixing bowl and mix well, add all the rest and mix until well blended. 
Spray you muffin mold and pour the batter half way, top with chocolate chip and bake for 15-20 minutes. 
* note - if you don’t have pumpkin flour you may substitute with 2tbs almond flour and add 1tbs of pumpkin purée
