Vegan Beet Ravioli

What do you need : 
1 Raw beet
2tbs White vinegar 
1 Avocado 
5 basil leaves ( big ones ) 
1 lemon
Kite hill vegan cheese or your favorite 
Bunch of dill or your favorite green herbs 

Spices : cumin and salt, Spicy pepper- optional

  1. Slice your beet as thin as you can 
  2. Place them in a bowl with ice water to cover the beets , add  2tbs of white vinegar and sprinkle salt 
  3. Set  aside for 30 minuets minimum 
  4. Season your cheese: sprinkle cumin, salt and chopped dill and mix 
  5. In a food processor combine: avocado, lemon juice, basils and spicy pepper and mix it till you get a creamy texture. 
  6. Dry the beets and fill them with cheese, like sandwiches place them on your creamy avocado or serve the avocado as a dip , enjoy
