Vegan rice paper burekas

1 pack of rice paper ( 11 sheets )
1 cup sheep’s milk feta cheese ( vegan version)
1 cup fresh mozzarella ( your fave vegan
1 -2 cups spinach ( chopped )
1tbs olive oil
3tbs tahini ( any flavor)
Salt & pepper to taste
  • preheat oven to 375F
  • Burekas filling: In a big mixing bowl, mix 3 tbs of tahini with cheese & spinach, mix well
  • While the oven preheats, dip a rice paper sheet into the warm water for about 8-10 seconds or until it becomes just barely malleable. IMPORTANT: they should not as soft as you would make them for spring rolls! You want the rice paper to still be a bit stiff so it holds is crunch. Add the 2-3tbs of cheese filling and roll the paper up like you would a burrito- over, side, side, over.
  • Place the rolls onto a baking sheet ( spray baking sheet with olive oil ) and Bake in the oven until golden, approx. 15 mins per  or longer if needed , enjoy ( note: the vegan cheese won’t melt like the regular but was delicious)
