Detox soup :
Ingredients
1 bunch scallions/ or leek
1 yellow/ white onion ( peeled )
1 bunch of celery
1 bunch of parsley, cilantro, dill
2 squash
4 carrots
2 zucchini
2 lemon ( juice only )
Filtered water ( as much as needed for consistency)
3-5 tbs olive oil
Spices : sprinkle of salt, black pepper, turmeric, cumin, smoked paprika & curry
Instructions:
In a large pot, heat olive  oil over medium-high until warm. Add onions and cook for 5 minutes, stirring occasionally, then add scallions or leek and celery and cook for 5 additional minutes longer, add the  carrots, zucchini & squash and cook for 5 additional minutes. Sprinkle your favorite spices, Pour in filter water about 1/2 height of your veggies and bring to boil, then reduce heat to low and simmer, covered, for 20 -25 minutes or until broccoli is easily pierced with fork. Turn to low heat and add lemon juice then let it blend and taste, adjust taste if needed. You could serve it with as veggies soup just like this or Working in batches if necessary blend it all in your food processor, you could blend it until very smooth you can use  hand blender if you have one as well :)
Note - I love serving with extra lemon juice and drizzle of olive oil on top .
