2 ingredients carrots hummus

2 ingredients carrots hummus

Two ingredients and a few simple steps for a smooth, flavor-packed carrot hummus. Let’s go!

 

Ingredients:

  • 5-6 carrots, peeled and cut into big chunks
  • 1/2 cup truffle tahini (any flavor you love)
  • Juice of 1/2 lemon
  • Salt and pepper, to taste

Top It Off:

  • Fresh herbs (think dill, parsley, or cilantro)
  • Seeds or nuts (sunflower, sesame, or whatever you love)

Instructions:

  1. Cook Carrots: Toss carrots in boiling salted water and cook until they’re soft (about 10-12 minutes). Keep some of the cooking water aside.



  2. Blend It Up: In a food processor, blend the cooked carrots with truffle tahini, lemon juice, salt, and pepper until it’s nice and creamy. If it’s too thick, add a splash of the cooking water; if too thin, a little more tahini will do the trick.


  3. Finish & Serve: Scoop it into a bowl, sprinkle with herbs and seeds, and enjoy! This is delicious warm or chilled.

Tips:

  • Try adding a dash of cumin or smoked paprika for an extra kick.
  • Perfect with warm gluten-free wraps, pita, or sliced veggies!
