2 ingredients carrots hummus
Two ingredients and a few simple steps for a smooth, flavor-packed carrot hummus. Let’s go!
Ingredients:
- 5-6 carrots, peeled and cut into big chunks
- 1/2 cup truffle tahini (any flavor you love)
- Juice of 1/2 lemon
- Salt and pepper, to taste
Top It Off:
- Fresh herbs (think dill, parsley, or cilantro)
- Seeds or nuts (sunflower, sesame, or whatever you love)

Cook Carrots: Toss carrots in boiling salted water and cook until they’re soft (about 10-12 minutes). Keep some of the cooking water aside.

Blend It Up: In a food processor, blend the cooked carrots with truffle tahini, lemon juice, salt, and pepper until it’s nice and creamy. If it’s too thick, add a splash of the cooking water; if too thin, a little more tahini will do the trick.

Finish & Serve: Scoop it into a bowl, sprinkle with herbs and seeds, and enjoy! This is delicious warm or chilled.
