Roasted fennel
Fennel is so underrated, one of my absolute favorite vegetables. You must try this recipe.
Ingredients:
- 2 fennel bulbs
- 3 tablespoons olive oil
- 1 teaspoon sumac
- 1 teaspoon za'atar
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F.
- Slice the fennel into thin slices using a sharp knife or mandolin.
- On a parchment-lined baking sheet, arrange the fennel slices in a single layer.
- Drizzle olive oil on top and sprinkle with spices.
- Broil for 15-20 minutes or until golden and edges are crispy.
- Dip in curry tahini or any tahini flavor and enjoy; it’s so delicious.
- You can keep leftovers in the fridge and add them to your salad the next day.
