Beet muffins

Beet muffins (6 muffins) 
2 eggs 
2tbs coconut flour 
4tbs almond flour 
2 tbs beet flour 
3tbs maple syrup 
3tbs almond milk 
1tbs baking powder 
1/2 tsp vanilla extract ( optional ) 
1/3 cup Unsweetened dark chocolate or your favorite topping ( or any of your favorite) I love shaved almonds the most :) 
  • preheat oven to 375F 
Combine all wet ingredients in a medium mixing bowl and mix well, add all the rest and mix until well blended. 
Spray you muffin mold and pour the batter half way, top with chocolate chip and bake for 15-20 minutes.
