Broccoli spinach quiche

Broccoli spinach quiche:
3 cups of broccoli rice ( or chopped broccoli)
3 cups chopped spinach
1 small chopped onion
3 organic cage free eggs
1.1/2 cup cottage cheese 
1/2 cup goat feta cheese 
1/2 cup cashews
1tsp baking powder
2tsp sesame seeds
Spices: sprinkle of : cumin, paprika, zathar turmeric and salt & pepper to taste
  • preheat oven to 375F
  1. In a large mixing bowl mix baking powder, eggs, cheese and spices
  2. Add all veggies and mix well, pour mixture into your favorite quiche dish about 9*13 inch will give you 12 medium size squares  (spray before to prevent sticking when serving)
  3. Top it up with sesame and cashews on top
  4. Bake between 30-35 minutes or until toothpick comes out clean from the center, edges should be golden brown
  5. Serve warm or cold, both delicious and great as a meal or as snack, keep in the refrigerator for 3 days .
* notes : 1. I always add 3-5 tsp inulin into the eggs mixture, high fiber will keep you fuller for longer time while cleaning your gut , food with benefits!
2. You can substitute the cheese to vegan / dairy free  cheese or your favorite option, I believe in goat cheese and cottage cheese ! They have many health benefits for your body ! Enjoy
