Cauliflower shakshuka

Cauliflower shakshuka:
Cauliflower rice ( I used frozen bag 500g )
1/2 cup chopped parsley
1/2 cup chopped cilantro
1/2 cup chopped scallions
2tbs olive oil
1 cup tomato sauce (I used raos)
1/4 cup pesto tahini (all flavors will be delicious)
Spices: sprinkle of turmeric, smoked paprika, cumin, salt & pepper to taste
Start with olive oil on medium heat in a nonstick skillet, and sprinkle all spices inside to infuse your oil & open your spices, you will be able to smell it when the spices open up (about 2 minutes)
Add in the cauliflower rice and mix it
Add all green herbs
Add tomato sauce & pesto tahini, mix well add water if needed and cover and simmer low for 15-20 minutes, taste and adjust flavor if needed
It’s time to crack your eggs on top
After adding the eggs cover the skillet for 3-5 minutes longer depending on how your prefer your eggs done, add spicy tahini drizzle on top ( optional but delicious! ) , you can garnish with more green herbs & feta cheese on top , enjoy.
