cheese moussaka:
🔶Moussaka Ingredients:
1 large eggplant ( will give you 4 “sandwich” moussaka )
1tbs olive oil or any spray oil
1/2 cup goat cheese feta
1/2 cup cottage cheese
2-3 tbs labane
🔷Dressing ingredients:
5tbs labne
1 bunch dill (chopped)
1/3 cup chopped basil
1/4 cup water
1tbs olive oil
♦️Garnish ingredients (optional) :
1tbs olive oil ( or oil spray )
1/3 cup Chopped fresh mushrooms
1/3 cup chopped onion
1/3 cup pine nuts
  • preheat oven to 425F
  1. Slice eggplant into 1/2inch circles
  2. With a silicon brush gently brush the eggplant with olive oil ( both sided )
  3. Place eggplant on a parchment paper and bake them in preheated oven 425f for 15 min and twist to the other side for 10 more minutes Or until golden brown
  4. While your eggplant are in he over, in a medium mixing bowl combine 1/2 cup goat  feta cheese, 1/2 cup cottage cheese, 2-3 tbs labane and mix well
  5. When the eggplant is golden carefully remove from the oven and stuffed them with your mixed cheese like a sandwich and place them on your favorite oven dish (similar to lasagna dish )
  6. Combine all dressing ingredients ( labane, olive oil, basil, dill, and water and pour on top, you can add any leftover cheese as well if you feel like it ! I am a cheese lover! Can’t have to much cheese !
  7. Return to the oven again for 5 minutes
  8. For Garnish: (optional)
Sauté on non stick skillet :
1tbs olive oil ( or oil spray )
1/3 cup Chopped fresh mushrooms
1/3 cup chopped onion
1/3 cup pine nuts
Sauté Until golden brown
And add it on top , it’s delicious and give a twist! And yummy crunch, serve warm, enjoy 😊
Notes :
  1. If you are missing one of the ingredients it’s ok, go for it anytime the combination between eggplant and cheese is divine!
  2. You can always substitute the labane with Greek yogurt but labane taste much better!
  3. You can use regular feta cheese, I personally prefer goat milk over cow .
  4. You can also add mozzarella / Parmesan etc ... the sky is the limit .
  5. I highly recommend to try my mushroom onion pine nuts on top it was insanely delicious!
