Coconut banana muffins for Passover

Coconut banana muffins:
Ingredients: (12 muffins)
3 small ripe bananas
1 large egg
1/2 cup coconut milk ( full fat from can )
1/2 cup coconut flour
2 tablespoon honey or fiber syrup
1 tsp baking powder
Sprinkle cinnamon
1/2 teaspoon vanilla extract ( optional )
Toppings : 1/3 cup of :
unsweetened coconut chips, unsweetened dark chocolate chip
Instructions:
  • preheat oven to 375F
  1. In a large mixing bowl, mash the bananas with honey by using a fork
  2. Add the egg and coconut milk and mix it well
  3. Add coconut flour & baking powder, mix well until all combine and well blend
  4. On a greased muffin mold pour batter and top it up with coconut & chocolate chips
  5. Bake for 12-15 minutes or until toothpick comes out clean , enjoy
