Vegan coconut macaroons for Passover

Passover coconut macaroon :
Ingredients: ( makes 6 macaroons)
1 cup unsweetened coconut chips
1/2 cup full fat coconut milk ( can )
3 tbs coconut flour
1 tsp coconut stevia sweetener or 2 tbs honey
  • preheat oven to 375f
  • Combine all the ingredients in a mixing bowl and mix well
  • Bake for 15-17 min or until lightly brown around the edges  ( u can try them at anytime, no raw ingredients inside)
  • Serving option : a drizzle of honey or drizzle of dark chocolate & sprinkle cinnamon on top , both options are delicious but I am a chocolate lover ! So chocolate won !
Important note:
  • because we didn’t use egg whites or gum to combine ingredients I recommend to pass the macrons from the oven to the refrigerator for 5- 10 minutes to keep the shape, but they will be perfectly fine to eat from the oven as well ..
  • If you are not vegan or have egg allergies you can add 1-2 egg whites to the mixture if you wish so
  • Chocolate drizzle: I use 1/3 cup unsweetened dark chocolate chip, in microwave safe bowl by 30 seconds increases
