Curry eggplant chips

Eggplant chips with a twist :
1 large eggplant
Marinade ingredients:
1 Large lemon zest ( Lemon zest )
2 Tbs Avocado oil
5-6 leaves Fresh Tarragon (optional but delicious)
1tsp Chili flex
Sprinkle of salt
  • preheat oven to 425F
  1. Slice eggplant into 1/2inch circles
  2. Mix all the marinade ingredients in a small mixing bowl and mix well
  3. With a silicon brush gently brush the eggplant ( both sided )
  4. Place eggplant on a parchment paper and bake them in preheated oven 425f for 15 min and twist to the other side for 10 more minutes Or until golden brown, be careful they are addictive 👌🏻
Recipe: curry tahini  dip
1/2 cup curry tahini (any flavor)
1 lemon juice
1/4 cup cold water
Salt & pepper to taste
( recommend white pepper )
Mix all ingredients in mixing bowl and adjust consistency if need by adding lemon or water.
