Gluten free pecan pie

Pecan pie : 
2 eggs 
1/2 cup cashew butter 
1/2 cup raw tahini paste 
1/2 cup cashew milk ( full fat )
1/2 fiber syrup or maple syrup
1/3 cup chopped pecans
1/4 cup inulin powder ( optional but highly recommend, add lots of fiber ) 
1 tsp vanilla extract 
1tsp baking powder 
Sprinkle of salt 
Preheat oven to 375F 
  • Combine all ingredients in a medium mixing bowl, mix well
  • Spray your pie pan with coconut oil and pour your batter in it, you may decorate with pecans on top if you wish so :) it’s so pretty  bake for 12-15 minutes, or until toothpick comes out clean 
  • Serving suggestions: dairy free coconut ice cream and more syrup on top, enjoy
