hamantaschen, vegan & high fiber
This dough will melt in your mouth, it’s so delicious , this recipe is high fiber and vegan I will eat those all year around.
hamantaschen ( 8 medium size )
Ingredients:
1 cup fiber gourmet flour
1/4 cup coconut butter ( I used nuco )
3 tbs silan tahini
1/4 cup room temperature water
3 scoopers of the goddess prebiotic
Stuffing:
3 tablespoons silan
3-5 tablespoons coconut halva (or any flavor)
Toppings: coconut chips ( optional )
A sprinkle of the goddess prebiotic instead of powdered sugar
Instructions:
- preheat oven to 350F
- In a medium mixing bowl : mix all ingredients and mix well , you’re going to use your hands to creat a dough
- Split the dough into small 8 balls
- Flatten the balls into flat circles
- grasp the left side of the circle and fold it, grasp the right side and than the bottom to create a little triangle, Pinch each corner of the triangle gently but firmly to secure the shape
- Place a teaspoon of filling in the center ( silan or halva ) , top with coconut chips
- Bake for 15 minutes edges should be light golden brown
- Let them cool completely , sprinkle the goddess prebiotic instead of sugar and enjoy
