Mediterranean eggplant pizza

Mediterranean eggplant pizza:
🔷 Ingredients:
1 large eggplant
Finely chopped:
1 cucumbers
5-6 celery sticks
1/2 Red pepper
Fresh spicy pepper ( optional)
1/2 Small onion
🔸Dressing ingredients:
1-2 lemons
1/2 cup goat feta cheese
Olive oil
Spices: salt, pepper, sumac
  • preheat oven to 425F
  1. Slice eggplant into 1/2inch circles
  2. With a silicon brush gently brush the eggplant ( both sides )
  3. Place eggplant on a parchment paper and bake them in preheated oven 425f for 15 min and twist to the other side for 10 more minutes Or until golden brown
  4. While your eggplants are baking in a medium mixing bowl combine all chopped veggies ( without feta ) and season to taste with lemon, olive oil, salt & pepper
  5. When eggplant is ready place the chopped salad on top and shredded feta cheese on top
  6. Sprinkle sumac on top (optional), enjoy
