Moroccon eggplant salad

Moroccon eggplant salad:
1 large eggplant
Dressing ingredients:
3tbs olive oil
3tbs vinegar
1/2 bunch chopped parsley
2-3 tsp paprika (spicy lover can you the spicy paprika)
1tsp cumin
Sprinkle salt to taste
  • preheat oven to 425F
  1. Slice eggplant into 1/2inch circles
  2. Mix all the marinade ingredients in a small mixing bowl and mix well
  3. With a silicon brush gently brush the eggplant ( both sided )
  4. Place eggplant on a parchment paper and bake them in preheated oven 425f for 15 min and twist to the other side for 10 more minutes Or until golden brown, be careful they are addictive 👌🏻
  5. In a small mixing bowl mix all dressing ingredients, taste and adjust if needed, I added more olive oil and cumin
  6. Place eggplant on your favorite serving dish and pour dressing on top, you can also store it in glass containers for 2-3 days, enjoy
