Roasted Kohlrabi

Roasted Kohlrabi: 
8 medium kohlrabi (3 pounds)
6tbs olive oil 
Kosher salt & Pepper
4 ounces vegan cheese or feta, crumbled (1 cup)
2 jalapeños—halved lengthwise, seeded and very thinly sliced crosswise
2 tablespoons thyme leaves
2 Tbs raw tahini ( raw sesame paste ) 
Parsley ( for garnish) 
  1. Peel the Kohlrabi 
  2. in a medium saucepan over medium-high heat. Cook the peeled Kohlrabi in hot ( boiling ) water about 10 minutes or until tender ( use a fork to check) 
  3. Preheat the oven to 450°. On a large baking sheet, drizzle the kohlrabi with olive oil and season with salt and pepper. Roast for about 25 minutes or until charred & golden on the outside and tender within ,
  4. Arrange the kohlrabi on a platter. Generously drizzle with olive oil and season with salt and pepper. Sprinkle with the cheese crumbs , jalapeños, thyme and parsley and raw tahini, enjoy 😊
