Zucchini pizza boats

Zucchini pizza boats:

Ingredients: ( 4 boats )

2 zucchini

1/2 cup tomatoes sauce

3tbs pesto tahini (or any flavor)

2tbs spicy tahini  (or any flavor)

1/3 cup slices mushrooms  

1/3 cup shredded cheese of your choice ( I love goat cheese, easy for digestion)

Salt & pepper to taste

 

♦️instructions:

  • preheat broil on 400f

1. Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in. shells. And place your zucchini boats on oven proof tray, spray them with oil to prevent sticking, and place in the oven 12-17 minuets Or until tender. And vibrant

2.In a medium mixing bowl : Chop zucchini pulp and add tomatoes sauce & tahini, salt & pepper, mix well, taste and adjust if needed

3.Remove zucchini out of the oven abs stuff them with the tomatoes, tahini & zucchini pulp, mushrooms & cheese, return to the oven and lower the oven to 375f for 5-7 min longer or until cheese is melted, so delicious, enjoy
