Vegan Curry :
1 can full fat coconut milk
1/2 curry tahini
1 cup spinach
2 -3 cups cauliflower florets
2-3 cups green beans
1 bunch scallions ( chopped )
1 bag of palmini rice ( follow instructions on the bag
Any of your green herbs for garnish
Any protein of your choice ( I used vegan chicken by daring foods )
  • protein is optional, you could do it as a curry veggies side dish or add your protein on top , you can’t go wrong:)
    • on medium heat , nonstick skillet , combine coconut milk & tahini and mix well
    • Add your vegetables inside and mix well
    • Add protein
    • Cover & cook on low heat for at least an hour or until your vegetables are soft and delicious
    • While your vegetables are cooking you can prep Tye palmini rice or your favorite rice
    • Serve warm , add green herb & splash of lemon on top ( salt & pepper to taste ) , enjoy
