Truffle stuffing

Truffle stuffing
1 sliced eggplant ( cubes )
2 sliced zucchini
1 cup sliced mushrooms
1 cup sliced carrots
1 cup sliced green beans
1 bag Brussels sprouts ( I like the organic frozen petite ones from wholefoods or from tjs )
5 tbs truffle tahini
2 tbs olive oil
3 slices of Royo bread or any of your choice
  • preheat oven to broil 415F
  • On your oven tray, layer parchment paper and place all the chopped vegetables &  olive oil ( salt in the end )
  • Place in the middle oven rack and broil for 15-20 min or until veggies are golden brown
  • Remove vegetables into a lasagna dish and add salt & pepper to taste , bread cubes & truffle tahini on top , be generous with the truffle tahini :)
  • Lower oven to 375F
  • Return to the oven  for 5-7 min , warm tahini is absolutely Devine, so so delicious, you can garnish with green herbs and splash of olive oil, enjoy .
