Green shakshuka

Mmm, so delicious this one is a must !

Green shakshuka:

2 cups chopped leek

1 bunch chopped parsley

3 cups spinach

3 cups chopped kale

2 chopped garlic cloves

1/2 spicy chopped chili pepper (optional)

3 tbs pesto tahini

1 tbs olive oil

1 teaspoon Zathar spice ( optional )

Salt & pepper to taste

6 eggs

 

Instructions:

  • on medium heat add olive oil and sauté leek, garlic, chili, green herbs, mix well & cover
  • When the leek is translucent add spinach & kale , mix well , add Zathar & pesto tahini , mix again and cover, let it cook for 3-5 min
  • Add your eggs , cover for 3 minutes & enjoy
