Mushrooms muffins

Mushrooms tahini muffins (6 muffins) 
♦️Ingredients 
6 Tbs tahini 
2 Tbs chia seeds 
2 Tbs vegan cream cheese ( I use kite hill , you can substitute with regular cream cheese ) 
2 cups water ( room temperature ) 
1/2 lemon ( juice) 
1 Tbs Lemon zest 
1 tsp Baking powder 
2 Tbs Honey 
1 tsp curry powder 
1/2 cup fresh sliced mushrooms 
♦️ instructions: 
  • preheat oven to 375 f 
  1. Soak the seeds ( 2tbs chia seeds ) in a large mixing bowl with the 1/2 cup of water for 10 minutes or until “ gel texture “ is formed 
  2. Add all the ingredients into the mixing bowl and whisk it well 
  3. Spray muffins mold with coconut spray 
  4. Pour batter into the muffins mold and bake for 20-30 minutes or until golden brown 
  5. Let it cool down for 10 minutes before serving 
Notes : 
1. You can substitute the flax & chia seeds with 2 eggs 
  1. I love serving the muffins with cream cheese on top and sliced avocado with sprinkle of salt and Zahtar  
  2. Store in the fridge ( up to 7 days )
