Skinny veggies hotdog :
Ingredients:

4-5 medium size Fresh raw carrots peeled and washed

3tbs of Apple cider vinegar

2tbs olive oil
-
Sprinkle of pink salt, cumin & smoked paprika

Hot dog buns (I used 0 carbs thin-slim food )

Mustard
-
Raw tahini
-
1 lemon
-
Avocado Spinach and sauerkraut for toppings
Instructions:

Marinade carrots over night in olive oil, apple cider vinegar and spices , for super smoky flavor add more smoked paprika

The next day Preheat oven to 425f and roast carrots on parchment paper for 15-25 minutes depending on how soft would you like the carrots to be, add more olive oil if needed.

While the carrots are in the oven it’s time for tahini mustard: in a dressing shaker combine 3tbs of your favorite mustard with 3tbs raw tahini 1/2-1 fresh lemon juice and approximately 1/4 cup ice cold water to adjust consistency, i sprinkle pink salt and white pepper, close the jar and shake it well, taste and adjust, I added more mustard and more water

Time to build your veggies bun : start with 1tbs tahini mustard as spread, layer of spinach 1/4 avocado on top 2 grilled carrots, top it up with sauerkraut and drizzle more tahini mustard on top !! Oh my that combination was amazing!!! Enjoy
