Skinny veggies hotdog

Skinny veggies hotdog : 
  • 4-5 medium size Fresh raw carrots peeled and washed 
  • 3tbs of Apple cider vinegar 
  • 2tbs olive oil 
  • Sprinkle of pink salt, cumin & smoked paprika
  • Hot dog buns (I used 0 carbs thin-slim food ) 
  • Mustard 
  • Raw tahini 
  • 1 lemon 
  • Avocado Spinach and sauerkraut  for toppings
  1. Marinade carrots over night in olive oil, apple cider vinegar and spices , for super smoky flavor add more smoked paprika 
  2. The next day Preheat oven to 425f and roast carrots on parchment paper for 15-25 minutes depending on how soft would you like the carrots to be, add more olive oil if needed. 
  3. While the carrots are in the oven it’s time for tahini mustard: in a dressing shaker combine 3tbs of your favorite mustard with 3tbs raw tahini 1/2-1 fresh lemon juice and approximately 1/4 cup ice cold water to adjust consistency, i sprinkle pink salt and white pepper, close the jar and shake it well, taste and adjust, I added more mustard and more water 
  4. Time to build your veggies bun : start with 1tbs tahini mustard as spread, layer of spinach 1/4 avocado on top 2 grilled carrots, top it up with sauerkraut and drizzle more  tahini mustard on top !! Oh my that combination was amazing!!! Enjoy 
Note: the bun is not gluten free:( but amazing for guilt free option, you can always choose gluten free buns or your favorite ones, the stars are the tahini mustard and the carrots 🥕
