tahini stuffed peppers š¶
Ā tahini stuffed peppersĀ
Letās start withy classic tahini :Ā
āļøHome made tahiniĀ
What u need :Ā
1lb Tahini raw sesame paste ( I use the mysexyveggies whole sesame tahini)Ā
2 squeeze lemonsĀ
1.1/2cup of ice waterĀ
Spices: cumin, salt, white pepperĀ
Instructions:Ā
For perfect creamy texture combine everything in a food processor and blend well *add water/ lemon if needed until you get the perfect consistency, if you donāt want to use food processor, you can do it in a mixing bowl and whisk it well, itās a great arm workout ššš»š

Note : use ice water (without the ice ) ! It makes differenceĀ
ā³ļøAnd now itās peppers time š
⢠10 mini peppers (whichever colour you like)Ā
⢠Juice and zest of one lime
āļø instructions:Ā
⢠trim peppers ( the top ) and clean the inside , drizzle with a little olive oil, salt and pepper and roast in the oven at 180 degrees for 15-20 minutesĀ
⢠Meanwhile, you can work on your tahiniĀ

⢠Remove the peppers from the oven and spoon the tahini mixture into the peppers
⢠Place the peppers back in the oven and cook for another 15 minutes
⢠Just before removing the peppers from the oven, sprinkle each stuffed pepper with lemon zest and drizzle some lemon juiceĀ
⢠Remove from the oven and serve on their own or with a side of greens or salad
* you can add any vegetables to the tahini mix.Ā Sometimes I will add some mushrooms or green herbs, quinoa if you'd like a slightly heavier meal. Enjoy šĀ
