Vegan Cauliflower pizza

Cauliflower pizza: 
PIZZA CRUST
  • 1 large  cauliflower head
  • 1 1/2 flax eggs (1 1/2 Tbsp (10 g) flaxseed soaked in 4.5 TBS of water 
  • 1/4 tsp sea salt
  • 3 TBS  nutritional yeast 
  • Bunch of : basil, mint, parsley 
  • 1 lemon 
  • Kite hill cheese or your favorite cheese 
TOPPINGS optional
      * Puréed tomatoes or my twist of creamy avocado salad 
  • Vegan Pesto 
  • Roasted vegetables (eggplant, bell pepper, onion, mushroom)
  • Fresh basil
  • Red pepper flake
  • Vegan cheese - I use kite hill 
Instructions
  1. Preheat oven to 375 degrees F (190 C).
  2. In a food processor: cauliflower florets and turn them into rice 
  3. Transfer cauliflower rice to a clean dish towel / cloth and ring out as much of the excess liquid as possible. This is THE most important step, so be sure to ring it out until no more water will come out. Set aside. 
  4. While this is happening, this is a good time to prepare pizza sauce or roast any   vegetables (such as onion and bell pepper) or your favorite toppings 
  5. In a large mixing bowl, prepare the flax egg and let rest 5 minutes. Then add cauliflower rice, sea salt & nutritional yeast and 2tbs of cheese 
  6. Stir with a mixing spoon or your hands to thoroughly combine. adding more vegan parmesan or nutritional yeast for cheesy flavor. 
  7. Line parchment paper or pizza stone/pan with parchment paper. 
  8. Then use your hands to carefully spread the dough into a circle or square (1/2-inch thick)
  9. Bake crust for 20-25 minutes. Then remove from oven and carefully flip the crust *with a spatula 
  10. Return to the oven and bake for an additional 10 minutes or until the edges appear golden brown
  11. Remove from oven and top with desired toppings (cooked or fresh).
*My tip: easy on the sauce as it can make the crust soggy if too much is applied. Bake for another 5-6 minuets or until toppings are ready Watch the *edges of the crust, which can get brown before the toppings.
  1. additional garnishes, such as fresh basil, red pepper flake, or vegan parmesan cheese.
  2. My avocado salsa : in a food processor : 1 large avocado 1 lemon bunch of mint, basil, parsley, spicy 🌶 and 1 Tbs of vegan cheese  mix till you get creamy texture, enjoy 😊
