Vegan GF lasagna

 Vegan lasagna ( Baked palmini ) 
❇️ ingredients: 
1 can palmini pasta 
2-3 cups of spinach 
2-3 cups of sliced fresh mushrooms 
1 fresh sliced chilly pepper ( optional) 
7 basil leaves 
2 sliced garlic clove 
broccoli sprouts ( optional for serving ) 
❇️ Vegan gluten free béchamel sauce ingredients: 
1 cup coconut milk ( from can ) 
1/2 cup tomatoes purée 
3 Tbs coconut flour 
1 Tbs nutritional yeast 
Spices : paprika, cumin & salt 
For topping; 
1/3 cup of vegan shredded mozzarella cheese or your favorite cheese 
❇️ instructions : 
  1. Preheat your oven to 375F 
  2. In a mixing bowl combine all sauce ingredients, sprinkle spices and whisk it well, taste and adjust if needed, I added more salt and more cumin 
  3. In oven proof glass Pyrex ( spray with coconut spray) and start to layer up, first spinach, mushrooms, palmini, garlic and spicy pepper and repeat until the top or your Pyrex 
  4. Pour the béchamel saucepan top and place in the oven for 15-20 minuets 
  5. In the last 3 minutes add the shredded cheese on top until it’s completely melt 
  6. I topped it up with more spicy pepper & broccoli sprouts
