Vegan Panna Cotta

Vegan panna cotta 
1 can of full fat coconut milk ( I love the 365 Whole Foods brand ) 
2-3 tbsp fiber syrup (or maple syrup or honey ) and 1 tsp vanilla extract 
1 tsp agar agar powder
strawberries to decorate ( I did pomegranate and honey for the holiday ) 
  1. Place agar agar, coconut syrup, vanilla extract and coconut milk to a small pot and bring to the boil then turn it down to a simmer. Cook for about 2-3 minutes whisking it constantly.
  2. Pour the mixture into 2 small silicon forms and chill in the fridge for 1-2 hour. Turn the puddings out into a plate to serve. Decorate with strawberries or fruit of your choice. And extra syrup drizzle of course :)  Enjoy!
