Zucchini hummus

4 medium size zucchini 
1/2 cup pesto tahini (or any flavor)
1/2 lemon juice 
salt & pepper to taste 
toppings : corn , avocado, olives & grilled mushrooms


* preheat oven to 400F on broil 
* use a fork to create little holes and place zucchini on your oven proof tray 

* grill the zucchini for 15-20 minutes or until Soft 
* gently & carefully slice the zucchini and combine it with tahini lemon in your food processor, mix well until it’s smooth and creamy, try and adjust taste if needed 

* you can top it up with any toppings or use it as a spread, In israel we love serving hummus warm, it’s so delicious, enjoy
